With my partner being Canadian, and after travelling there from the US numerous times, I am wholly convinced the only time Canadians eat Poutine is when they're trying to convince a foreigner it's delicious.
Was it in Québec? Because other provinces tend to have cheap imitations of what you can get at a proper casse-croûte in Québec.
Were you ever out bar hopping until after 2am in a town with a poutine place that stays open that late?
